DECADENT CHOCOLATE CUPCAKES WITH FUDGE GANACHE

Image
I love chocolate! In fact, I eat chocolate everyday. Literally.. Everyday… One piece… Like a vitamin! Let me explain. Years ago, a friend gave me a generous gift of various chocolates she had picked up while traveling all over Europe. I wanted to gobble them all down in one sitting! BUT…I decided to put them in fridge and enjoy them slowly, tasting one piece each day, until they were gone. Since then, I’ve developed the habit of eating a little piece of chocolate everyday. Eating chocolate not only makes me happy, it keeps the chocolate cravings to a minimum! There are obviously times, when a little piece of chocolate isn’t nearly enough. That’s when I make these go-to chocolate cupcakes. The fudge ganache adds richness [for those who are serious about chocolate]. However, these cupcakes are just as good with a light dusting of powdered sugar. Key techniques to keep in mind when making this recipe: Use quality ingredients Bring eggs & buttermilk to room temperature DO NOT OVER...

Red Velvet Coconut Cake with Coconut Cream Cheese Frosting

Image
Two favorite cakes combined into one towering dessert, this Red Velvet Coconut Cake with Coconut Cream Cheese Frosting is bright and festive. A great dessert to share with anyone you love. I made you a cake. It’s another gigantic cake and I couldn’t decide which flavor to make so I made both….in one mammoth cake mashup. What do you think? Do you think it’s big enough? My grandmother used to make a red velvet cake when I was like 2 feet tall. I loved it….it was my favorite cake by far and, maybe, not because of the flavor but because of the color. Growing up north of the Mason Dixon Line, you didn’t see a lot of Red Velvet Cake flying around like you do today. She didn’t even call her’s a red velvet cake….it was known as Flame Cake to us Northerners. And I’m not sure that it’s even the same cake come to think of it….maybe this story is completely irrelevant. But whatever, I used to request Flame Cake for my birthday every year. And my mom would make something else, like a fancy...

Strawberry Basil Margarita Summer Cocktail

Image
Strawberry. Basil. MARGARITA. Can I get an “oh heck yeah”?!? Tired of the straight-up margarita? This strawberry basil margarita is a fun twist on the classic. It’s a sweet, tart and refreshing cocktail, perfect for summer outdoor sipping! That’s right. I took summer’s best flavors – juicy sweet strawberries and peppery refreshing basil – and I mashed ’em up into summer’s best cocktail. Actually, I didn’t mash ’em, I blended them, but more on that later. I’d like to claim that I did this all for you, but no, friends, no I did not – I did it for me. And it was a very, very good thing I did for myself. The good news? YOU can get in on this action too! Be kind to yourself – make a strawberry basil margarita. You might be thinking “eh, too much fuss”. Why would I want to add strawberries and basil, when I can sip on the classic? script async src="//pagead2.googlesyndication.com/pagead/js/adsbygoogle.js"> Well for one – they’re pretty. Yes, that’s totally a reason. For two –...

Teriyaki Chicken Casserole

Image
First off, I must say I have to give Carrian from the amazing food blog Oh Sweet Basil top notch credit for this fantastic recipe! If you are looking for an incredible, delicious and healthy meal to feed your family- this is it! This Teriyaki Chicken Casserole is one you’ll love and even the kiddos too. I think casseroles get a bad rap, and I can totally see why. Especially when they’re packed with a bunch of processed ingredients and cream-of-whatever soups everyone loves to hate. (I use them but not all the time.) For me though, I adore a good casserole. As a main or side dish. They’re comforting, yummy and usually pretty darn easy to whip up. I love that.  This one happens to be full of ingredients that are good for you and it is so delicious! When I made it for dinner the other week it hit a home run with my family. When my quiet hubby raves about a meal while we’re eating- I know it’s a winner. This will make an appearance often in the dinner rotation.   TERIYAKI CHICK...

And I do mean favorite. I have tried a lot of chocolate chip cookies in life, and have been baking up batches of my own ever since my dad taught me how to lick the b...
